Chef Joe D’Andrea’s passion for Italian cooking was inspired by his grandmother in the family kitchen in West Chester, Pennsylvania.  After earning a BA in Business at West Chester University, Joe enrolled in the Italian Culinary Academy (ICA) in Manhattan, NY. The ICA not only teaches classical cooking subjects like stocks and sauces; meat, poultry, and game; pizza and bread baking; and desserts and pastries; it also provides coursework in cheese and antipasti, Italian wine, Italian culture, and Italian language. After completing the initial coursework, Joe traveled to Parma, Italy to complete a study abroad program with the International School of Italian Cuisine. Upon completion of the program, he gained further experience by interning with Chef Nunzio Spagnuolo in Sorrento, Italy.
When he returned to West Chester, he put his education, experience, and passion to work by establishing Vera Pasta. His goal? To bring the true flavors of Italy to the US.
Fresh and dried pasta made using the finest ingredients and artisan techniques, with high-quality equipment, is very different from the spaghetti you have been buying since your college days for $1.15per pound. Bronze die extruded pasta, like Joe crafts, has texture that allows pasta to hold sauce better. Artisan made pasta is hand processed and undergoes a slow drying time. No high heat methods or additional chemicals are used to accelerate this important step. The flavor of the ingredients develops with the slower process. And for Joe, using the best ingredients is what sets his pastas apart.
Kamut International is pleased that Vera Pasta is working with KAMUT® brand khorasan wheat to make what Joe describes as some of the finest, most flavorful pasta available in the US. Joe calls KAMUT® wheat the “Rolls Royce” of wheat and likes it for the flavor and texture it imparts. He also appreciates the higher nutrition and healthy qualities of this ancient, organically grown grain.
Vera Pasta makes both fresh and dry pasta available in both retail and wholesale packaging. The fresh pasta is available at farmers’ markets and specialty grocery stores in the Philadelphia area. Dry pasta can be ordered from anywhere online. Vera Pasta will also open a restaurant and store in the Philadelphia Bourse in 2018.
