KAMUT® Khorasan Wheat Bulgur Caprese Salad


Adding the whole grain goodness of bulgur wheat to this classic Italian salad makes it a satisfying lunch or dinner.

1 cup KAMUT® Brand khorasan wheat bulgur
1/4 teaspoon each salt and pepper
1 1/2 cups halved cherry tomatoes
1 1/2 cups baby bocconcini cheese
1/3 cup thinly sliced fresh basil
Balsamic Vinaigrette:
2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1/2 teaspoon honey
1/2 clove garlic, minced
1/4 teaspoon each salt and pepper
1/3 cup extra-virgin olive oil

In saucepan, bring bulgur and 2 cups of water to boil. Reduce heat to low; cover and simmer for 15 to 18 minutes or until bulgur is tender. Transfer to large bowl; season with salt and pepper. Add cherry tomatoes, bocconcini and basil.
Balsamic Vinaigrette: Whisk together balsamic vinegar, mustard, honey, garlic, salt and pepper; gradually whisk in olive oil. Pour over bulgur mixture and toss to coat well.
