Delicious (and vegan!) treats - courtesy of Jess from the blog Cupcakes & Kale
5 cups KAMUT® wheat puffs to fill a 9 x 13 dish
1/3 cup ground flax seed
1 cup brown rice syrup
1/4 cup Earth Balance margarine
3/4 cup natural peanut butter
2 teaspoons pure vanilla extract
1/2 cup vegan chocolate chips (or carob chips)
In a large bowl (and use one larger than you might think you need - trust me..i had KAMUT® wheat puffs everywhere!) combine the KAMUT® Brand khorasan wheat puffs and ground flax seed. Set aside.
Pour the peanut butter mixture over the KAMUT® wheat puffs and stir everything up with a wooden spoon (the ground flax will have inevitably settled to the bottom of the bowl so make sure you really stir things up well). scrape the mixture into a 9" x 13" baking dish that is lined with parchment paper and press it down evenly with the back of the wooden spoon, making sure you get right into the corners.
Meanwhile, lick the bowl of melted chocolate even though it might be before 10am. i give you permission to indulge. cut these up however you like and enjoy their sweet gooeyness that totally reminds me of a gradeschool bake sale.
