Spaghetti with Cream of Zucchini and Seafood
Brown a clove of garlic with a drizzle of oil. Meanwhile, wash the zucchini, slice them and add them to the pan. Cover with a lid and cook gently until the zucchini have softened so you can mash or blend them. Cook the pasta and in the meantime open the seafood in a pan. Filter the water that they have released and set aside.
Add the seafood to the zucchini cream together with the shrimp and deglaze with the white wine. Once the alcohol has evaporated, cook for a couple of minutes. Then add the shellfish water, mix everything and turn off.
When the pasta is ready, add it to the sauce and quickly sauté in a pan to mix the flavors. Top with chopped parsley and serve.
