KAMUT® brand wheat is a source of protein, fiber, zinc, phosphorus, magnesium, vitamin B1 (thiamin), and vitamin B3 (niacin). It is also high in many minerals such as selenium, copper, manganese, and molybdenum. These nutrients have many benefits including contribution to normal cognitive function, normal metabolism, maintaining normal blood pressure, and protection from oxidative stress.
KAMUT® brand wheat has an extremely diverse profile of polyphenols. Polyphenols are a family of molecules that have gained much attention as they have strong antioxidant and anti-inflammatory properties.
Additionally, KAMUT® brand wheat has a high level of carotenoids which are another family of strong antioxidants and are likely responsible for the rich golden color of the grain and flour.
Although the gluten in KAMUT® brand wheat is different than found in modern wheat, it is still present and therefore the grain is not suitable for those with celiac disease.
